Potato Soup

Cheesy potato soup

  • 5 lbs russet potatoes
  • 4 stalks celery
  • Large onion
  • 3 large carrots
  • 1 lb of bacon
  • 2% or whole milk
  • Half lb of velveeta
  1. Cook bacon till crisp, break into small pieces and set aside.
  2. Peel and cut potatoes into large chunks. Boil with celery and onion until cooked through. Drain.
  3. Add shredded carrot, bacon, salt and pepper, and butter. Mash potatoes just a little, add milk until desired soup consistency. Should be more thick than thin. Heat until steamy, then add cubes of velveeta until melted.
