Molasses Glazed Smoked Salmon

  • Molasses Glaze:
  • 1/4 cup molasses
  • 1/4 cup soy sauce
  • 2 Tbsp white wine
  • Pinch of red pepper flakes

  • Dry Rub:
  • 1/4 cup coarse ground black pepper
  • 2 Tbsp kosher salt
  • 2 Tbsp raw sugar
  • 1 Tbsp garlic powder
  • 1 Tbsp coriander
  • 1 tsp ground mustard
  • 1 Tsp onion powder
  1. Combine all ingredients to make glaze.
  2. Warm glaze for 2-3 min. then allow to cool to room temp.
  3. Combine all ingredients to make dry rub
  4. Cut Salmon filets into serving size pieces
  5. Dry with paper towels
  6. Skin side down, brush filets with molasses glaze
  7. Sprinkle filets with dry rub and place in fridge for 30 min.
  8. Spray cooking grates with Pam
  9. Set grill temp to 325 degrees, use fruitwood pellets
  10. Cook for 20-30 min.
  11. Internal temp. 135 degrees
  12. Remove and rest for 5 min.
