Marshmallow-topped sweet potatoes have "required eating" status during the holidays (is it even Thanksgiving without them?). But this recipe is so satisfying that we think it should be served way more often. And it's so quick and easy to make, there's basically no reason not to!

  • 3 (15-oz.) cans sweet potatoes, drained
  • 1/4 cup margarine or butter, melted
  • 1/4 cup firmly packed brown sugar
  • 1/2 teaspoon salt
  • 15 large marshmallows

  2. Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with nonstick cooking spray.

  4. Place sweet potatoes in sprayed baking dish. Pour margarine over potatoes. Sprinkle with brown sugar and salt. Top with marshmallows.

  6. Bake at 350°F. for 25 to 30 minutes or until potatoes are thoroughly heated and marshmallows are lightly browned.
