Spatchcock Chicken

  • 2 whole chickens, approx 5-6 lbs.
  • Rub
  • 2 sticks butter
  • 2 bottles beer
  • Glaze:
  • 1 cup BBQ Sauce
  • 1 stick butter
  • 1/4 cup honey
  1. Spatchcock chickens and flatten
  2. Season both sides with rub
  3. Smoke at 180-200 degrees for 1 hr.
  4. While smoking:
  5. In an aluminum roasting pan place 2 sticks butter per chicken,
  6. 2 bottles of beer and a few tablespoons of rub
  7. Place roasting pan on smoker to melt and combine ingredients, stir
  8. After 1 hr. of smoking, place chickens in roasting pan with the melted butter, beer and rub
  9. Cover the roasting pan with foil and cook for another 45 min.
  10. Remove chicken and place back on grates.
  11. Move temp up to 325-350 degrees
  12. Cook until,internal temp is 160-165 degrees
  13. Glaze:
  14. Combine 1 cup BBQ Sauce, 1 stick butter and 1/4 cup honey.
  15. Heat until butter is melted
  16. Glaze the chicken on the racks and cook for 10 minutes
  17. Remove and rest for 10-15 min.
