Prep Time Prep: 1hr. Cook Time Cook: 4 hrs. Total Time Total: 4.5 hrs.

Yield: 8-10

Spare ribs or back ribs

  • 3 rack of ribs
  • APG
  • Olive Oil or Mustard as binder
  • Rub
  • Butter
  • Brown sugar
  • Honey
  • BBQ sauce
  1. Remove membrane from ribs
  2. Apply binder
  3. Apply light coat APG
  4. Apply rub to all sides
  5. Smoke, bone side down, for 2.5 hrs. at 235 degrees
  6. Spritz after 45 min. and 1.5 hrs.
  7. At 2.5 hrs. Remove from heat and prepare to wrap
  8. Meat side down
  9. Butter, Brown sugar and honey, both sides
  10. Double wrap in aluminum fo8l
  11. Place back in smoker, meat side down, for 1 hr.
  12. Remove from heat and unwrap
  13. Return to heat and sauce both sides of racks
  14. Cook an additional 30 min.
  15. Remove from grill and rest covered with foil for 20 minutes
