Smoked Meatloaf

Prep Time Prep: 1.5 hrs. Cook Time Cook: 2.5hrs. Total Time Total: 4hrs.

Yield: 4-6

Smoked/ Glazed Meatloaf

  • 3 Scallions
  • 1 stalk celery
  • 1/2 red bell pepper
  • 3 cloves garlic, minced
  • 2 lbs. ground beef, 80-20
  • 1 lb. ground pork
  • 1 cup bread crumbs
  • 1 egg, beaten
  • APG, inside and outside
  1. Combine all ingredients
  2. Line small foil bread pans with Saran Wrap
  3. Fill each bread pan with meat mixture
  4. Place in fridge for 1 hr.
  5. ______________________________________
  6. Remove from fridge
  7. On a raised rack, turn the bread pans upside down to remove meatloaves
  8. Place rack in smoker for 2 hrs. At 275 degrees
  9. At 2 hrs. glaze meatloaves with bbq sauce
  10. Cook for additional 15-20 min.
  11. Internal temp 160 degrees
  12. Remove from heat and rest for 10 minutes
