  • Brine:
  • 64 oz apple juice
  • 1 cup brown sugar
  • 1/2 cup kosher salt
  • 1/2 cup The BBQ Rub
  • Seasoning:
  • The BBQ Rub - all sides
  • Montreal Steak seasoning - light coat
  1. Brine for 1 to 1.5 hours in fridge
  2. Remove from fridge 30 minutes before starting the cook
  3. Season
  4. Use Fruitwood pellets
  5. Smoke for 1 - 1.5 hrs at 250 degrees
  6. Flip at 45 min. to 1 hr. point
  7. Internal temp 140-145 degrees
  8. Rest 10-15 min.
