  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 16 ounces canned unsweetened pumpkin
  • 3 1/2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2/3 cup water
  1. Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans. Stir together the sugar and oil in a bowl. Stir in the eggs and pumpkin. Combine the dry ingredients in separate bowl. Blend the dry ingredients and water into wet mixture, alternating. Divide the batter between two loaf pans. Bake until cake tester comes out clean, 1 hour. Let stand 10 minutes. Remove from the pans and cool.
