Easy Paleo Chocolate

  • 1/2 cup coconut oil (measured as liquid)
  • 1/2 cup cacao powder
  • 2 tablespoons honey (more if you like sweeter chocolate)
  • 1/8 teaspoon salt
  • 1/4 teaspoon mint extract OR
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons OR instant coffee
  1. Place coconut oil, cacao powder, and honey in a sauce pan and heat over medium heat until combined. Use a whisk to make sure all lumps are gone.
  2. Remove from heat and stir in any additions.
  3. Once smooth, pour into molds or onto a tray and place in the freezer for at least an hour to harden.
  4. Remove from molds and store in the freezer. They will melt at room temperature because of the coconut oil.
