A healthy Asian recipe that is paleo diet friendly! Low Carb Slow Cooker Orange Chicken is a fabulous dinner your family will love!

  • 3 pounds boneless chicken thighs
  • 2 -3  cups orange juice
  • 1/2 cup soy sauce
  • (or brown sugar)
  • (or corn starch)
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh grated ginger, packed
  • 3 garlic cloves, minced
  • 1 tablespoon sesame oil
  • Zest of 2 oranges
  • 1-2 dashes crushed red pepper
  • 2 tablespoons sesame seeds
  1. Cut the chicken thighs into small bite-size pieces. Place the pieces in the crock of a large slow cooker.
  2. In a large mixing bowl combine 2 cups orange juice, soy sauce, sugar, arrowroot, vinegar, ginger, garlic, sesame oil, orange zest, and crushed red pepper. Whisk well to remove clumps.
  3. Pour the mixture over the chicken and toss to coat. Then turn the slow cooker on low and cook for 3 – 4 hours, or cook on high for 1 1/2 – 2 hours. If the sauce seems to thick, add additional orange juice to loosen it up. Serve with rice, or with cauliflower rice for a complete low carb meal!
